Menu Plan 2-24-07


Time for my "Monday" menu plan again... for more menu plans, visit Laura at orgjunkie on Monday!

Last week I made a couple new recipes: The quesadillas from Pioneer Woman's suggestions were delicious - zuchinnis, onions, mushrooms sauteed in red wine, sour cream, and pepper jack. It may sound like a strange combination, but they were delicious. I also made baked ravioli from Everyday FOOD, and while I thought I liked it, whenever I thought about it later or considered having it as leftovers, I started to feel nauseous. Even now, I can't even think about making it again. I think it had a really strong onion flavor and it just struck me wrong. *shudder* I don't think I'll make that specific recipe again.

That said, this week:
Sunday: Potato and onion fritatta from January/February Everyday FOOD and bell pepper saute

Monday: Brown rice shrimp bowl with avocado-lime dressing (also from Jan/Feb Everyday FOOD...)

Tuesday: Chicken Zucchini Pot supper (slow-cooker meal with chicken breast, zucchini, parmesan, etc. Thought I'd give it a shot and see if it's a winner or not...

Wednesday: Church supper!! Dessert for Bible study: Spiced Zucchini Bars with Cranberries and Pecans-- low calories and fat!

Thursday: Pioneer Vegetable Soup --another crockpot recipe; I have craft night with gals from work this Thursday, so it'll be nice to come home to a soup. It will be my first experience with turnips... I'm also going to make some Parmesan muffins

Friday: Homemade pizza with salami and red sauce (with the staple crust I always make from Crystal- it only takes 15 minutes to mix up and get in the oven, and it's so yummy baked on my pizza stone!!)

Saturday: Mediterranean salad from January/February Everyday FOOD magazine - it has artichoke hearts, canellini beans, sundried tomatoes, etc. and Italian bread
